01 - Combine almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl. Whisk thoroughly. Allow the mixture to sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours, until the pudding is set and thickened.
02 - Spoon a layer of chia pudding evenly into the bottom of four glasses or jars. Distribute diced watermelon over the pudding, followed by a portion of mixed fresh berries.
03 - Repeat the chia pudding, watermelon, and berry layers as desired, finishing with a generous sprinkle of granola on top.
04 - Garnish each parfait with fresh mint leaves. Serve immediately or keep chilled until ready to enjoy.
