- Place pineapple chunks and strawberries in a blender. Process on high speed until completely smooth and no chunks remain.
- Set a fine-mesh sieve over a large pitcher. Pour the blended fruit mixture through the sieve, using a spatula or spoon to press firmly and extract maximum juice. Discard the remaining pulp.
- Add the lemon juice and sugar to the strained fruit puree. Stir vigorously for 1-2 minutes until all sugar crystals have completely dissolved.
- Pour in the cold water and stir thoroughly to incorporate all ingredients. Taste and adjust sweetness by adding more sugar if desired. Refrigerate for at least 30 minutes to allow flavors to meld and mixture to chill thoroughly.
- Fill serving glasses with ice cubes. Pour the chilled pineapple pink lemonade over ice. Decorate each glass with fresh pineapple wedges, lemon slices, and mint leaves. Serve immediately.
