01 - Preheat oven to 375°F. Line a 9x5 inch loaf pan with parchment paper or lightly grease with cooking spray.
02 - Combine breadcrumbs and milk in a small bowl. Let stand for 5 minutes until absorbed.
03 - Place ground turkey, soaked breadcrumbs, eggs, tomato paste, olive oil, feta cheese, red onion, garlic, sun-dried tomatoes, roasted red peppers if using, parsley, basil, oregano, salt, and pepper in a large mixing bowl.
04 - Mix gently with hands or spatula until just combined. Avoid overmixing to prevent tough texture.
05 - Transfer mixture to prepared loaf pan and press evenly to shape.
06 - Bake for 45 to 50 minutes until internal temperature reaches 165°F and top is golden brown.
07 - Let meatloaf rest for 10 minutes before slicing. Serve warm, garnished with additional fresh herbs if desired.
