01 - Preheat the oven to 375°F. Line a baking sheet with parchment paper.
02 - Combine mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until melted and smooth.
03 - Add almond flour, baking powder, and salt to the cheese mixture. Mix thoroughly to incorporate.
04 - Add the egg and mix until a soft dough forms. Use a spatula or your hands; the dough will be sticky.
05 - Place the dough between two sheets of parchment paper. Roll out into a rectangle about ¼ inch thick.
06 - Transfer the dough with the bottom parchment to the prepared baking sheet.
07 - In a small bowl, mix melted butter with minced garlic and parsley.
08 - Brush half of the garlic butter mixture evenly over the dough surface.
09 - Bake for 15-18 minutes, or until the surface is golden brown.
10 - Remove from the oven, brush with remaining garlic butter, and sprinkle with Parmesan cheese if desired. Slice into 8 breadsticks and serve warm.
