Homemade Strawberry Gummies (Printable)

Naturally sweet strawberry gummies made with fresh fruit, honey, and gelatin. A healthier homemade treat perfect for snacking.

# What You Need:

→ Fruit Base

01 - 1 ½ cups fresh strawberries, hulled and halved
02 - 2–3 tablespoons honey or maple syrup
03 - 2 tablespoons freshly squeezed lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - ½ cup cold water

# Steps:

01 - Place the strawberries and lemon juice in a blender or food processor. Blend until completely smooth, ensuring no fruit chunks remain.
02 - Pour the puree into a small saucepan. Add honey or maple syrup and stir thoroughly to combine evenly throughout the mixture.
03 - In a separate small bowl, sprinkle the gelatin powder over the cold water. Let it sit for 3–5 minutes until it thickens and absorbs all the liquid.
04 - Gently heat the strawberry mixture over medium-low heat for 2–3 minutes until just warm throughout. Do not allow the mixture to boil.
05 - Add the bloomed gelatin to the saucepan, whisking constantly until fully dissolved and the mixture becomes completely smooth, approximately 2 minutes.
06 - Remove from heat and carefully pour the mixture into silicone gummy molds or a parchment-lined small baking dish, filling each cavity evenly.
07 - Refrigerate for at least 2 hours, or until completely firm and set to the touch.
08 - Remove gummies from molds or cut into bite-size pieces if using a baking dish. Store in an airtight container in the refrigerator for up to 1 week.

# Expert Hints:

01 -
  • These capture the bright taste of peak season strawberries without any artificial nonsense
  • The texture is perfectly chewy and reminds me of the fruit snacks I loved as a kid but way better
02 -
  • Never let your strawberry mixture boil or the gelatin won't set properly, I ruined my first batch this way
  • Working quickly once the gelatin is dissolved matters because it starts setting faster than you'd expect
03 -
  • Silicone molds make removal effortless and give you those perfect shapes
  • If your puree seems too thick, add a teaspoon of water to help it blend smoothly
