- Place the strawberries and lemon juice in a blender or food processor. Blend until completely smooth, ensuring no fruit chunks remain.
- Pour the puree into a small saucepan. Add honey or maple syrup and stir thoroughly to combine evenly throughout the mixture.
- In a separate small bowl, sprinkle the gelatin powder over the cold water. Let it sit for 3–5 minutes until it thickens and absorbs all the liquid.
- Gently heat the strawberry mixture over medium-low heat for 2–3 minutes until just warm throughout. Do not allow the mixture to boil.
- Add the bloomed gelatin to the saucepan, whisking constantly until fully dissolved and the mixture becomes completely smooth, approximately 2 minutes.
- Remove from heat and carefully pour the mixture into silicone gummy molds or a parchment-lined small baking dish, filling each cavity evenly.
- Refrigerate for at least 2 hours, or until completely firm and set to the touch.
- Remove gummies from molds or cut into bite-size pieces if using a baking dish. Store in an airtight container in the refrigerator for up to 1 week.
