01 - Preheat oven to 375°F. Line small baking sheet with parchment paper.
02 - Place Brie wheel on prepared baking sheet. Score top in crosshatch pattern with sharp knife.
03 - Spread apricot preserves evenly over top. Sprinkle chopped pecans and drizzle honey if using.
04 - Bake 12-15 minutes until Brie is soft and starting to ooze but not completely melted.
05 - Remove from oven and let stand 2-3 minutes. Transfer to serving platter and garnish with fresh thyme if desired.
06 - Serve immediately with crackers or sliced baguette.
